
Matsuhisa’s Zen Palate
Matsuhisa, a Japanese eatery in Aspen, recently undertook a significant renovation of its top floor to celebrate its 20th anniversary. The project aimed to modernize the space while preserving the existing aesthetic of a Japanese restaurant housed within a 120-year-old Victorian building. Rowland + Broughton Architecture, a local design firm known for its work on Matsuhisa Denver, was commissioned for the redesign.
The renovation incorporated design elements from the Denver location, including dark stone for the floor and bar walls, a wood acoustic ceiling, and WhisperSpan acoustic ceiling treatment, contributing to an overall organic and refined aesthetic. The historic character of the building, a former miner's cabin, was maintained by refinishing the original wood floors and highlighting the gable pitched ceilings with acoustic material and new lighting.
A key aspect of the redesign was the complete reconfiguration and streamlining of the kitchen and sushi bar. This upgrade now allows for the preparation of some menu items previously only available downstairs. The exposed stainless-steel kitchen is intended to emphasize the precision and craftsmanship involved in the culinary process. Chef Nobu Matsuhisa himself was directly involved in the design of the sushi bar, ensuring that its dimensions facilitate direct hand-delivery of sushi to patrons, highlighting his focus on detail and service.
The nine-seat cocktail bar, while retaining its original position, received substantial improvements. The liquor display was redesigned using an antique mirror, quartz surface, walnut wood, and integrated lighting to showcase the bottles. These enhancements also benefit the restaurant's robust catering services. The renovated upstairs space is envisioned as a versatile venue for private events, offering an intimate atmosphere, an advanced sound system, a large-screen TV, and the unique combination of a private cocktail bar and a private sushi bar.
