A Kitchen Torch Is More Useful Than You Think — We Burned Countless Crème Brûlées to Find the Best Ones

This article evaluates the best kitchen torches available for home cooks, highlighting their utility beyond traditional uses like caramelizing crème brûlée. The author, Jennifer Zyman, Food & Wine's Testing Editor, conducted extensive tests on various models, burning crème brûlées and marshmallow fluff to assess performance, ease of use, safety, and overall value. The selection criteria included factors like refillable canisters versus torch heads, fuel type (butane vs. propane), size, and overall ease of handling. Four top kitchen torches were identified. The BonJour Chef’s Tools Butane Torch was selected as the "Best Overall" due to its ease of use, lightweight aluminum construction, adjustable flame control, and safety lock, despite its flame not being the strongest. The Rösle Kitchen Torch, recognized as the "Best Overall Runner-Up," stood out for its Bavarian craftsmanship, stainless steel design, high heat capability (up to 2372°F), adjustable gas dial, and child-resistant safety switch. Its compact size and long-lasting fill were noted, though it is a more expensive option. The Bernzomatic Micro Butane Torch earned the title of "Best Value." This torch is lightweight, features a narrow profile for effortless handling, reaches high temperatures (2860°F), and includes a push-button igniter and a soldering tip. Its ease of filling and long-lasting fuel capacity were also highlighted. For those willing to splurge, the Messermeister Culinary Torch was recommended as the "Best Splurge." This model features an attractive and durable aluminum casing, a textured grip, trigger start, and the ability to work at any angle. Although it has a wider feel and a separate base, its long tank fill time (approximately 60 hours) and robust flame (2000°F) make it a premium choice. The testing methodology involved a manual inspection of each torch's feel and comfort, followed by evaluating the ease of filling and lighting, and checking for safety features like child locks. Practical tests included browning marshmallow fluff and caramelizing crème brûlées in glass jars, ensuring even browning without curdling. Expert insights from acclaimed baking expert Rose Levy Beranbaum revealed unconventional uses for kitchen torches, such as quickly bringing butter to room temperature, releasing baked goods stuck to pans, and warming the bottom of pie crusts for easy removal. The article emphasizes that while some powerful, professional-grade torches exist, butane-based models with refillable reservoirs are generally safer and more suitable for home use. Butane, easily accessible and affordable, is recommended over propane for home kitchens due to its higher boiling point and storage requirements, with any residual flavor deemed negligible. The article also provides instructions on how to refill a kitchen torch. #KitchenTorches #CookingTools #CulinaryGadgets #ProductReview #HomeCooking #BakingTips #KitchenSafety #KitchenTorches #CookingTools #CulinaryGadgets #ProductReview #HomeCooking #BakingTips #KitchenSafety
