Ben Napier, known for his woodworking on HGTV's "Home Town," showcased a unique butcher block surface in Season 7, Episode 16. The episode featured Ben and Erin Napier renovating a Mid-century home, aiming to enhance its existing character. Instead of traditional butcher block countertops, Ben conceived an innovative kitchen island workspace constructed from end grain wood. This particular type of hardwood countertop utilizes only the end grain of the wood, which contributes to a more resilient surface.
During the reveal, contractors observed that the end grain blocks effectively mirrored the aesthetic of the surrounding brick floors, highlighting the strategic use of geometry for creating a unified design. For individuals not ready to commit to an entire island or countertop made of butcher block, end grain style cutting boards are available for purchase on Ben and Erin's website, Scotsman USA, though these items frequently sell out. Scotsman USA also offers conventional butcher block material for larger surface areas.
While Ben and Erin are proponents of butcher block, it has certain characteristics that may not suit all users. A common drawback is that butcher block countertops lack heat resistance, a property that is not improved by using the end grain variation. Nevertheless, when considering longevity, Ben clarified in the episode that end grain maple butcher block is more durable, absorbs moisture effectively, and is gentle on knives.
End grain countertops can also mitigate the risk of mold or mildew, which can be an issue with traditional butcher block. The act of cutting on the surface compresses moisture and small food particles, thereby reducing the potential for harmful bacteria accumulation. Despite this benefit, it remains crucial to dry the surface promptly and thoroughly clean any areas that have been exposed to raw meat.
