Blue Mountain School’s Cycene restaurant finds tranquillity through texture

Cycene, a new restaurant at Blue Mountain School in Shoreditch, London, offers an intimate dining experience inspired by the comforts of home. Collaborating with executive chef Theo Clench, the space aims to blend international culinary influences with a tactile, domestically-inspired material palette. The restaurant's name, 'Cycene,' derived from Old English for kitchen, signifies its central focus on culinary preparation, which is integrated into the dining experience. Chef Clench's 10-course tasting menu draws from his extensive travels across Eastern Asia and Australasia, utilizing classic techniques and seasonal ingredients to create a diverse flavour profile. The design of Cycene, overseen by Blue Mountain School founders James and Christie Brown, emphasizes the kitchen as a focal point. The kitchen itself is significantly larger than its predecessor at Mãos, and its aesthetic draws inspiration from pre-WW1 and South African farm kitchens. This influence is evident in the choice of materials, including brushed stainless steel counters, handmade Portuguese tiles on the walls (designed by Stephanie Macdonald of 6a architects), and robust blue quarry floor bricks. These elements combine to create a textured and grounding environment, balancing practicality with decorative details. A key feature of the kitchen is the oak-panelled chef’s pass, topped with granite, and an iron pot rack, which collectively contribute to the farmhouse ambiance. This design language extends into the hearth room, a private dining space that can be secluded with floor-to-ceiling drapes. Within this room, forged iron candle holders add an artistic touch to walls adorned with hand-painted tiles, culminating in a porcelain chandelier by Tyler Hays of BDDW. The overall intention behind these design choices is to evoke a sense of home and familiarity, creating a tranquil backdrop for the culinary journey. The dining room, designed for only 16 covers, fosters an intimate atmosphere. Its plastered walls are decorated with moody artworks by renowned artists Frank Auerbach and Lucian Freud, adding a layer of sophistication and art historical depth to the space. The integration of art, custom design, and a curated material selection underlines the restaurant's commitment to providing a holistic and sensory experience that goes beyond just food.
