Taupe by Titlie in Goa offers Indian flavours with a modern twist
Taupe by Titlie, the latest culinary venture from chef-entrepreneur Tarun Sibal and Titlie Hospitality partners Bipin Sibal, Karrtik Dhingra, and Shyaam Khurana, has opened in Assagao, Goa. This modern Indian restaurant is situated in a 150-year-old Portuguese villa, sharing its premises with the previously launched cocktail bar, Barfly. The establishment represents the second and final phase of a comprehensive dine-and-drink experience envisioned by the partners. The name 'Taupe' reflects a spectrum of colors, including greys, blues, and mauves, drawing a connection to 'Titlie,' the Hindi word for butterfly, and this palette is integrated throughout the restaurant's minimalistic design.
The villa underwent extensive restoration, managed by interior design studio SKID during Barfly's development, with Karrtik and Shyaam spearheading Taupe's design. The interior features soft pink windows, beige and green walls, and rattan furniture with grey linens, extending across indoor and outdoor dining areas. The space is designed to accommodate 90 patrons, offering various seating arrangements, including a patio and an outdoor platform for private gatherings. The design preserves the villa's historical Goan charm while incorporating elements of new-age hospitality, such as leaf-imprinted flooring and a swaying fabric roof.
The menu at Taupe focuses on regional Indian cuisine, reinterpreted with modern textures, flavors, and ingredients. Examples include a creamed burrata papdi chaat enhanced with jalapeño, achaar purée, and amchur chutney. The Goan prawn balchao is presented with hollandaise and tobiko, offering a contemporary twist on a local classic. A vegetarian version of haleem is prepared with yams and served with khamiri roti, demonstrating innovative approaches to traditional dishes. The restaurant also offers distinct bread pairings, such as Malwani chicken sukka with missi roti, tawa meat with phulka, and dal khurchan with biscuit bread, aiming to provide a unique dining experience while retaining comforting familiarity.
In addition to the Indian offerings, the menu includes pastas and pizzas. This inclusion caters to a broader audience, acknowledging the restaurant's role as a family dining destination in Goa and providing options for those seeking simple comfort food or less adventurous choices. The beverage program at Taupe is designed to complement the food, with cocktails that evoke nostalgia through local flavors. Signature drinks include the Jamun Kokum Highball, featuring gin with spices like bhuna jeera, the Parra Road Colada made with coconut water and liqueur, and a Banana Caramel Milk Punch with a hint of salt. These cocktails are crafted to be flavorful without being overly sweet, preparing the palate for desserts.
Dessert options round out the meal with dishes like basque cheesecake served with a berry compote and coconut panna cotta with diced mango. Variations of classic kheer, such as apple and banana caramel, are offered alongside gelato. The restaurant aims to provide a dining experience that is both modern in spirit and Indian at heart, located at Anjuna Mapusa Road, Saunto Vaddo, Assagao, Goa. A meal for two is estimated to cost from ₹2,000.
