A Kitchen Tool So Good, Dylan From ‘The Great British Baking Show’ Stole It Off the Set | Reviews by Wirecutter

Dylan Bachelet, a 20-year-old finalist on season 12 of 'The Great British Baking Show' (known as 'The Great British Bake Off' outside the United States), discusses a crucial kitchen tool that significantly aided his baking and culinary career: the Thermapen One instant-read thermometer. Bachelet, who impressed judges and fans with his flavors, emphasizes the importance of precision in baking, a skill he developed significantly during the show. He explains that while he has cooked and baked his entire life, the show served as an intense learning period, pushing him to perfect recipes, sometimes remaking them 10 to 15 times. A pivotal moment in his baking journey occurred when fellow contestant Sumayah Kazi introduced him to the concept of temperature-based baking. Previously, Bachelet relied on the traditional skewer test to check if cakes were baked, a method he now describes as 'primitive' and often inaccurate. Sumayah taught him to use a thermometer to measure the internal temperature of baked goods, specifically recommending pulling a cake out at 98 °C (208 °F). This technique provided him with an objective measure of quality, ensuring his cakes were never underbaked or overbaked. Bachelet initially used a knockoff Thermapen, but during the show, he noticed discrepancies in temperature readings compared to the authentic Thermapen provided on set. Trusting the official Thermapen's accuracy, he began to rely on it heavily, even admitting to taking a couple of them from the set for his personal use. He contrasts this scientific approach with more traditional methods, noting that while many can bake excellently by 'eye and feel' (like his grandmother), a thermometer ensures consistency, especially when recreating recipes multiple times. He highlights how precise temperature control, for instance, can subtly alter the bitterness or darkness of caramel. He further elaborates on the Thermapen's superiority by explaining that many so-called instant-read thermometers are not truly instant; their probes heat up with the baked good, causing fluctuating and inaccurate readings. The Thermapen One, in contrast, is genuinely instant, sensitive, and responsive, providing immediate and accurate temperature measurements. This precision is invaluable for consistent results. Currently, Bachelet is working long hours as a chef de partie at The Five Fields, a Michelin-starred restaurant in London, where he extensively uses his Thermapens for various cooking tasks, including frying. However, he recently faced an unfortunate incident where his chef bag, containing his knives and Thermapens, was stolen after he fell asleep on the Tube. He expressed his dismay and hope to replace them soon, acknowledging the irony of the situation given how he acquired some of them.
